With the inception of New Nordic Cuisine in 2004, several Scandinavian restaurants opened in New York City within a very few years. These restaurants were rooted in the concept of New Nordic Cuisine, and opened to widespread acclaim. New Nordic Cuisine is based on traditional cooking techniques such as pickling, smoking, salting, and purity of products.
